On 7 February 2019, as usual we came to campus before 08.00, oneline in front of kitchen, absent by senior and checked our toolbag, put our bag in locker. After that we oneline in pastry and bakery to begin our activity today.....
Today we will make a Choux ala Creme and Eclair..Before do Sir Faisal showed how to make Choux ala Creme and Eclair. After that we prepared the ingredient and tools before do.
First we must melted butter mix with milk and sugar and boil it but just until 80 celcius because if until 100 c the milk will be broke(pic1). Then add flour (still in stove) stir it until all ingredient mix well and not sticky (pic2).
Mixer it until cold but dont make the butter melt and pour an eggs (pic3). After that put in piping bag and shapes like picture below but the center cannot be empty. and for Eclair just make it long. And bake it
After that fill it with pastry cream that we have made before and Choux ala Creme & Eclair is ready to serve.. Cool would be nice :)
RECIPE
Choux :
500 ml Water or milk
250 gr butter
70 gr Hard Flour
300 gr Soft Flour
5 gr Milk Powder
625 gr Egg
Filling :
Pastry Cream
1,4 L Fresh Milk
150 gr Sugar
120 gr All purpose
300 gr Egg Yolk
General cleaning always before we go home....
yuppss today is over, topic of pastry and bakery is done today, 2 week ago we will handle breakfast..
