#9 Daily Activity (English Version)

Hallo readers...
      Welcome back to my blog its about 1 week i didn't write because last week i'm in the theory class.
So this is my first day in kitchen for this week. Our practical on this week is rotation menu, from rotation 1.1 until 1.4. Why is it called the rotation menu, because each group rotates to handle the menu. for example, team 1 will handle the appetizer today and the next day will handle the soup and so on, until in the end 1 group has handled all menu (from appetizer until dessert).
      At 4 march 2019, we came early at 06.00 but we oneline at 07.00 and senior check our gromming and tools, after that we keep out bag in locker and oneline in pastry and bakery.
     Before we prepare ingredients for tomorrow, our senior incharge explain what will we do today. In rotation menu 1.1 there are Chicken Salad Hawaiian (Appetizer), Shrimp Bisque (soup), Beef Stew, Baked Potatoes, Zucchini Saute Provencale (Main Course), and Yellow Butter Cake (Dessert).
    And today my team handle soup but there is a additional menu in Soup, it is a French Bread. Actually French Bread not used in soup but in Appetizer but Appetizer Menu will prepare for breakfast so for make easy we divide task.
    Some my team prepare for Shrimp Bisque and the other and i handle French Bread. Some people will think when make French Bread is easy because it just a Unrich Bread and Basic too. But for us it little 'susah' (hard) , because when we practic French Bread we repeat it almost 2 week.

Recipe

French Bread
Ingredients : 
875 ml Water
45 g Yeast
1500 gr Hard Flour
30 gr Salt
Steps of make French Bread
The Result
How To make :
1. Mix all dry Ingredients like Hard Flour, Salt and yeast
2. Add water and mix it until soft
3. Fermentation it about 30 - 60 minutes and cover it with napkin
4. Knocking back the dough so that the gas comes out
5. Scaling portion (1 french bread = 450-500 gr)
6. Moulding it and place in sheet pan and fermetation in proofing machine in 27c
7. Bake it about 15-20 minutes in 180-200 c

After all preparation is finished, we oneline again for divided General Cleaning and today's activities closed by Sir Faisal.
