After yesterday we have public holiday , so today we returned to our usual activities on Thursday. Our activity today is to cook 2.1 and 2.2 rotation menus, the ingredients are prepared by Tuesday, so there is a cooking time

my group was divided into 2 parts because we worked 2 meals, which part 1 for main course beef rice bowl and second for dessert num chak kachan. And I was given the task to handle the main course

BEEF RICE BOWL

Steps :

Sous vide beef about 2-4 hours
Blanch carrots and brocolli
After beef have been sous vide, pansier it and cut
saute onion, add black pepper sauce, add a little water. Reduce until beef smooth

After that we do GC and ready to go home.
